As to the question why this works, I'm going to be brief and leave a lot out so there may be some critics of this answer:
Olifaction (the sense of smell) and gustation (the sense of taste - and I don't mean in fashion) use the same nerves. If you clean out your mouth, it leaves an extra unadulterated cavity in which odors can linger to be sampled and re-sampled by your olfactory gland.
Now, class, close your textbooks....
